Karrot Kake
I LOVE carrot cake (it's a tie between carrot cake & a really good cheesecake for favorites). I love this recipe from my mom. It takes some time but it's well worth it.

3 C grated carrots
2 C sugar
2 C flour
4 eggs
1 1/2 C veg. oil
1 (8oz) pkg. cream cheese, softened
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp vanilla
2 Tbsp applesauce
1 C chopped nuts
Beat carrots, sugar, flour, eggs, veg oil, and softened cream cheese together. Add baking soda, salt, cinnamon, vanilla, applesauce and chopped nuts. Bake in a 9X13 greased and floured pan @ 350 for 55 minutes, or until clean toothpick.
Cream cheese Icing
1/4 C butter or margarine, softened
1 (8 oz) pkg cream cheese, softened
1 (1 lb) pkg powdered sugar
2 Tbsp milk
1 tsp vanilla
Cream butter and cream cheese together. Add powdered sugar, milk, and vanilla and beat until smooth. Spread on COOLED cake.

This recipe is also good if you add a small can of crushed pineapple, drained. Super moist and YUMMY!!!
