Simple Popovers



I got this recipe from Everybody Likes Sandwiches (great foodie blog btw). It's meant for breakfast but I thought I'd try it out for a side dish. It was great with strawberry jam. Very light and simple. Nothing too fancy shmancy.


2 eggs

1 c skim milk

1 T butter, melted

1 c minus 2 T flour

1/2 t salt


Preheat oven to 375°F. Generously oil up 10 cups in a 12 cup muffin tin and add the greased tin to the oven to get hot. Meanwhile, whisk the eggs, milk and melted butter together. Add in flour and salt and whisk until combined but still slightly lumpy. Remove hot muffin tray from oven and pour batter in each cup halfway. Bake in the oven for about 25-30 minutes until the tops are golden brown and puffy. Remove from oven and serve warm with preserves and fresh fruit.

My friend brought me something similar to this for our dinner trade and had a cream of chickeny sauce with chicken bites, peas, etc. You poured the sauce over the pastry and it tasted like pot pie! Just another idea for you.

It's also a Yorkshire Pudding! We love these with traditional roast beef - you pour gravy all over and enjoy it all in the same mouthful. Mmmmm.....
