The Oaks Breakfast Casserole

Yet another Heidi special. I have my own recipes, promise. Her recipes are just different from mine and they have all been good so far. So I am posting them here (hope you don't mind Heidi!).
I had to make two egg type dishes for our ward Easter Eggstravaganza yesterday. This was easy and yummy. You do have to make it the night before though so you have to plan ahead.
No pic again. I was in a rush to get out the door. Next time.

8 slices white bread – cut the crusts off and cube in 1 inch pieces in a 9x13 pan.
2 lbs sausage (cooked).
Put sausage over bread
Beat together:
4 eggs
2 c. milk
1 tsp dry mustard
Pour over bread and sausage.
Add 2 c. grated cheddar cheese on top.
Refrigerate overnight.
Next morning:1 can cream of mushroom soup½ c. milk
Pour mixture over 9x13. Bake at 300 for 1 ½ hours (Covered with tin foil) The last 30-40 minutes, remove the foil).

German Pancakes

(German pancakes before the toppings)

We had breakfast for dinner tonight (has been a weekly thing for awhile now). This recipe was my favorite growing up along with Rolly Polies (did not know they were called crepes probably until I was in college). I've heard it called Hills & Valleys before too. My mom used to this with raspberry syrup (YUM). You can serve them with whatever- the standard maple syrup or powdered sugar will do. I actually like mine plain. But I serve the kids and Josh theirs with syrup. So easy and good. Oh and for some reason tonight's German pancakes didn't rise as much or look like they usually do (hmmm???)...so next time I'll post another pic. Still tasted good just didn't quite look the same. And be warned- you need to serve them quickly because the "hills and valleys" crash quickly.

6-8 eggs
½ c. sugar
½ c. flour
½ c. butter, melted
½ c.- 1c. milk
½ tsp. salt
1 tsp. vanilla

Preheat over 400F. Mix ingredients in order. Pour into greased 9x13 pan & bake for 20-24 minutes. Serve with berry/maple syrup or powdered sugar.

Simple Popovers



I got this recipe from Everybody Likes Sandwiches (great foodie blog btw). It's meant for breakfast but I thought I'd try it out for a side dish. It was great with strawberry jam. Very light and simple. Nothing too fancy shmancy.


2 eggs

1 c skim milk

1 T butter, melted

1 c minus 2 T flour

1/2 t salt


Preheat oven to 375°F. Generously oil up 10 cups in a 12 cup muffin tin and add the greased tin to the oven to get hot. Meanwhile, whisk the eggs, milk and melted butter together. Add in flour and salt and whisk until combined but still slightly lumpy. Remove hot muffin tray from oven and pour batter in each cup halfway. Bake in the oven for about 25-30 minutes until the tops are golden brown and puffy. Remove from oven and serve warm with preserves and fresh fruit.

Mom's Cream Cheese Danish

My friend Jaimee requested this recipe. It is by far the most asked for recipe once you've had it. My mom started making it about 20 years ago. And the tradition now is for Christmas she mass produces them for good friends (really people count on these every Christmas). We eat it every Christmas morning. YUMMMMMMMMMMM....But this is a long process- not for the novice.

1 c. sour cream
1/2 c. butter, melted
2 pkgs yeast (fast acting)
1/2 c. warm water

2 eggs
1/2 c sugar
1/2 tsp salt
4 c. flour

(2) 8 oz. cream cheese
3/4 c. sugar
1 egg beaten
1/2 tsp salt
2 tsp vanilla

Comstock cherry pie filling

Melt souar cream and 1/2 c. butter over low heat. Dissolve 2 pks yeast into warm water. Add yeast to sour cream and butter. In a bow mix second group of ingredients, adding flour last. Add yeast mix to the second mix. Refridgerate overnight (or at least 2-3 hours) in a bowl covered with wax paper. Combine 3rd group of ingredients for the filling. Beat the filling 3-5 mins until smooth. Extend the dough making 2 rectangles and put filling in the middle. Spread comstock cherries over filling. Cut the dough diagonally in strips folding over the filling (braided pattern). Brush with beaten egg and top with slivered almonds. Bake at 375 for 15 mins (until golden on top).
