Baked Potato Soup

This recipe is from my friend Nicole. Easy to make and super good. We had it on Sunday for dinner but everyone was so excited to eat it that I couldn't sneak a picture in. I will next time.
Perfect for the changing season...

4 medium baked potatoes
2 slices bacon
1/2 c celery, chopped
1/2 c. green onions, thinly sliced
1 can 14 oz. chicken broth
1 garlic clove, pressed
1/2 tsp salt
1/4 tsp black pepper
1 c. sour cream
2 oz. shredded cheddar cheese

Remove skins from cooled baked potatoes. Coarsely mash with potato masher. Cook bacon over medium heat until crisp. Remove bacon to paper towel to drain; crumble and set aside. Discard all but 1/2 tsp drippings in pan. In a medium pot, put in chicken broth, mashed potatoes, celery, green onions, garlic, salt, pepper, and bacon drippings. Bring to a boil. Reduce heat; simmer 10 mins. Stir in sour cream and reserve bacon. Ladle into bowls and serve with cheese.
***Note in the recipe it says to add milk but it didn't have any measurements so I eyeballed it until it was the right thickness (not too thin- it's supposed to be a thick soup).
